Ingredients

  • Pack of Hot Dogs (5 dogs used in total)
  • Pack of pepper stir fry
  • Smoked Gouda Macaroni & Cheese

Steps for Cooking

  1. Prepare your hot dogs. Cut all 5 hot dogs long ways, and then into bite-sized sections. Divide them into two equal portions (2.5 dogs each).
  2. Boil water in a pot for the mac & cheese. Once boiling, add the noodles and cook to your liking.
  3. Build fonde and flavor. In a pan (cast iron is best for even heat), place the first 2.5 hot dogs flat side down. Cook until they are burnt on the flat side and sticking to the pan.
  4. Extract flavor. Once stuck, start moving them around and flattening them out to remove as much moisture and flavor as possible.
  5. Discard initial hot dogs. Once the moisture is removed, take them out of the pan and discard them.
  6. Sauté vegetables. In the same pan, add your pepper stir fry. Cook and move the vegetables around until you see color on them.
  7. Add remaining meat. Once the vegetables have color, add the remaining 2.5 hot dogs to the pan.
  8. Deglaze. Once the hot dogs take on color, add 1-2 tbsp of the pasta water. Allow it to reduce until no moisture is left in the pan.
  9. Add the fat. Take a small amount of the cheese from your mac and cheese and add it to the pan with the hot dogs and stir fry. This adds that essential fat flavor.
  10. Plate your meal.

There you go! You have plenty of meals with your pan-seared hot dogs with peppers and onions and a side of smoked gouda mac and cheese.
